Roast Pepper / Rosemary and Sweet Potatoe Soup

Hello everyone!

The Soup Master is back!! Hahaha!

Ok, it’s not funny and I am not the Master. All I do, is cook with loads of

Love and Passion, which brings pleasure not only to me, but hopefully to

everyone I cook for and to you too!

 

Recipe:

450g peppers (mixed colours)

450g sweet potatoes

4 cloves of garlic

15- 20g fresh rosemary

1 tbsp nutmeg powder

1 tbsp smoked paprika powder

100ml white wine

1300ml water with vegetable stock

salt & pepper

 

Method:

Chop the cleaned peppers and sweet potatoes into chunky cubes, crush

the peeled garlic and finely chop the fresh rosemary. Put all of these into

the pot with olive oil for cooking or coconut oil, and braise for around 8

min. Add nutmeg, smoked paprika and wine, cook for another 4 min,

then add water with stock and cook for around 45 min until soft. Once

cooked, blend it all up in a food processor or mixer and season with salt

and pepper. Enjoy!
