Hello, to everyone in this world!!! I just woke up a few minutes ago, the
sun shining into my room, which made me smile, this is what I call a
perfect morning! In the UK it is quite rare to have a sunny day, but when
it happens, everybody is in a much better mood, very happy and outside
enjoying the sunshine to the full! It is easier to be happy when the sun is
out, but me personally, I am happy everyday, sunshine or not!!!
Today I would love to share my happiness with you and make a nice,
easy and quick lunch.
This dish will serve to 2 people.
Recipe:
1 basil tofu
100g broad beans
150g green peas
120g sugar snap
120g leek
120g samphire
150ml white vine
150ml soya crème
5 tbsp of smoke paprika
salt & pepper
Method:
Preheat the oven to 180oC. When hot, put the tofu for 18 minutes into the
oven. While the tofu is in the oven, in a large wok I fried chopped leek,
peeled broad beans and peas for about 5-7 minutes.
Then add the smoked paprika, wine, sugar snaps and samphire, crème,
salt and pepper, and mix it all well together…
