Hi, my lovely readers from all around the world. As you already might
know, I Love soups! And now I am back with another one. Mixing and
trying new combinations! You tell me, how it works this time!
Let’s cook together!
Recipe:
390g cauliflower
80g baby shallots
1 large orange
200 ml coconut milk
pinch of saffron
salt + pepper
1l water with organic or home made vegetable stock
½ tbsp. cayenne pepper
Method:
Wash and cut the cauliflower into small chunks and with the chopped up
shallots, place in a pot with a little amount of coconut oil and braise for
about 6 minutes. Then add water with veg stock, pepper, milk, orange
(cut into halves) and saffron. Once the soup is ready, remove orange and
blend well, adding salt and pepper to your taste.
Enjoy
What do you mean by “when the soup is ready”? How long should it cook? Do you bring it to a boil and then reduce to simmer covered? …
Hi Cate, yes your question is answered, just around 45 min. then use food processor make to smooth consistency:) Tom
