Such good quality meals, smells, and different cuisines from all over the world and so many smiling friendly people. This place instantly inspired some recipe ideas, and this one, in particular, reminds me of summer and the incredible London markets. You can use this all season and slightly change it as you like.

Also, it’s perfect for any occasion and I believe kids will like it as well. It will take around 15 min and you can serve it for your family, friends, It will make a nice starter for a summer bbq, or delicious brunch meal.

Ingredients:

250g baby plum tomatoes

1 cloves garlic

40g spring onion

1 teaspoon of cider apple vinegar

1 teaspoon of agave syrup

1/2 lime juice + zest

1 teaspoon of mini capers

15g fresh basil

1 large spoon of vegan butter

pinch of dry chili flakes

salt & pepper

olive oil for cooking

bread of your choice

Ingredients

  • 250g baby plum tomatoes
  • 1 cloves garlic
  • 40g spring onion
  • 1 teaspoon of cider apple vinegar
  • 1 teaspoon of agave syrup
  • 1/2 lime juice + zest
  • 1 teaspoon of mini capers
  • 15g fresh basil
  • 1 large spoon of vegan butter
  • pinch of dry chili flakes
  • salt & pepper
  • olive oil for cooking
  • bread of your choice

Instructions

Put a small amount of olive oil in a large wok or frying pan before adding the chopped garlic and spring onion. On medium heat sear the mixture and after 3 min add the tomatoes and capers. Mix it together before adding all the other ingredients and after 6 min, when the ingredients are all melted together, add the fresh basil and you can serve it on your bread.
